Cinnamon and Vanilla Diamond Warmer (serves 10)

1 serving: 150ml
With bourbon/whiskey
1 serving: 175ml

3 cans (1500ml) of Diamond Black
2 tablespoons of dark brown sugar
2 whole nutmeg seeds, grated
1 cinnamon stick
1x star anise
1 vanilla pod – split and scraped
250ml bourbon/whiskey if preferred

Additional cinnamon sticks, chopped apple, lemon or star anise to serve, as desired.

Method

Add all ingredients, including the bourbon or whiskey if desired, to a large saucepan and simmer over a low-medium heat for 15 minutes. Remove from the heat, and sieve to remove the solids, by pouring the contents through the sieve into another jug or pouring container. The removed solids can be discarded. Once sieved, pour into a mug for serving; we recommend a heat-proof glass mug or similar. Garnish as desired. Enjoy this tipple on a chilly winters evening, the perfect serve for Christmas!
