Spooky Slow Cooked pulled pork sandwich – a great snack to serve for Halloween or Bonfire Night (serves 8)

250ml Diamond White
150ml chicken stock
2 teaspoons vegetable oil
2 onions, sliced
150ml tomato ketchup
150g brown sugar
½ tablespoon paprika
½ tablespoon chilli powder
½ tablespoon garlic paste or powder
1 teaspoon cayenne pepper
1 tablespoon Worcestershire sauce
Seasoning (salt and pepper)
2kg approx. Pork joint, shoulder recommended
Sandwich buns to serve (8)

Method

Put the pork into a slow cooker, fat-side up. Alternatively, preheat the oven to 160C/140C fan/gas 3, and place the pork into an oven-proof, lidded roasting pot.

Place the remaining ingredients into a bowl and stir until thoroughly mixed. Pour the ingredients over the meat in the slow cooker or roasting pot. Put the lid on and cook on a low heat for approximately 6-8 hours. Alternatively, cook until the meat is tender and easily pulled apart with a fork.

Once cooked, remove from the slow cooker or roasting pot, and transfer to a chopping board, or similar. Use two forks to pull the pork apart. Put the pulled pork into a container. Drizzle the remaining cooking juices over the pork until the pulled pork is moist.

Serve in a bun. You could also add salad, coleslaw or top with your favourite BBQ sauce.
